Holiday Sweet "Cake Pop"




Hope everyone had a restful break! Today post is going to be about baking, who doesn't love it, especially when it means you can eat it afterwards! I'm in no way a professional, but I enjoy baking at an amateur level. Making things that I know I will like (to eat) once they're finished, is what I associate with baking. So when I cook, it's probably going to be sweet (I have a very sweet tooth)!

Cake Pops 

Here's what you'll need:

50 g dark cooking chocolate
30 g soft butter
2 egg yolks
50 g sugar
1 pinch of salt
90 g flower
(milk)

1. Preheat oven to 180 degrees C. Place chocolate and butter in saucepan and melt on low heat.
2. In big bowl, place egg yolks, sugar, salt and mix it with electric mixer. Add in the chocolate mixture and mix till you get a creamy consistency.
3. Gradually add in flower into the mixture. If the mixtures is to dry (gradually) add milk until it turns into a creamy mixture again (don't go overboard)!
4. Place mixture into your cake pop forms (don't forget to grease them) and place in the oven for about 15-20 minutes.
5. Let them cool and start icing and decorating them!

Healthy (Brown) Icing 

Here's what you'll need:

1 cup of chocolate chunks
1/3 cup of coconut oil
1 tablespoon of vanilla extract

1. Place saucepan over low heat and melt chocolate and coconut oil.
2. Add in vanilla extract and stir till mixture has no more chunks.
3. Place frosting in the refrigerator for 30 minutes (to let it get thicker).
4. Take out frosting from refrigerator and use a blender to mix the mixture till it becomes thick and fluffy.
5. And finally frost your cake pops, as you wish (I used a knife) and decorate!

Unhealthy (White) Icing 

Here's what you'll need:

1/2 cup butter
1 Teaspoon vanilla extract
4 cups confectioners sugar
(2 tablespoons milk)

1. Place butter and vanilla extract in large bowl and with electric mixer, beat until light and fluffy.
2. Gradually add in confectioners sugar and beat till it's fluffy.
3. If mixture is too powdery gradually add in milk.
4. Spread icing on your cake pops and again get (extra) creative with sprinkles!
